Borscht

In Busan there was an awesome little Russian Restaurant called Astoria. It was in the dodgy part of town that was known where all the Russian sailors went for a bit of 'entertainment'. Astoria catered for all their food needs :)

Anyways our Russian/American friend, Kira took us there one night and introduced us to Borscht. The most delicious, and only one I know, Russian soup. I've always wanted to try and make it at home, but the fact that I lived in a little cave in Busan didn't really help.

So at work at the moment, we are doing soup week. Everyday it's someone else's turn to make soup for everyone in the office. It's really convenient as you only have to worry about lunch once every two weeks. It's cheaper as well. We've had a few amazing soups, and very interesting too, I must add.

There are only two rules:

1. You are not allowed to buy soup
2. You have to make it from scratch

Last time I made bacon, broccoli and feta soup, which I thought was a great success. This time I tried something more adventurous and if you ask me a super big experiment - BORSCHT.

I documented the process...

First you dice all the veggies (potato, carrot, celery, cabbage and onion), saute and add beef stock. Simmer till veggies are slightly soft then add beet root juice and pureed tomatoes. When all is cooked add beet roots. Take off the heat before the beet root loses it's colour and serve with a dollop of sour cream and garnish with fresh parsley.

I think everyone at the office liked it. They finished all of it.. :) Happy face!
