No Meat Mondays

I'm trying something new - NO MEAT MONDAYS - this leads to a healthier, more environmentally happy lifestyle.. no?

It also forces me to use my millions of recipe books to create something awesome. Last night was my first attempt.

Greek Stuffed Tomatoes and Peppers and Tzatziki.

Ingredients:
- Big ripe tomatoes
- Big ripe peppers (multi coloured if possible)
- Rice
- Mint
- Parsley
- Onion
- Oil
- Salt, Pepper and Sugar

You start by emptying the tomatoes and peppers. Does that make sense? Take the insides out..

Fly the onions, add the rice, herbs and half of the tomato pulp. Simmer for about 10 minutes and stuff the raw tomatoes and peppers. Pop in the oven for approximately 40 minutes and garnish with parsley to serve. Easy and delish!

For Tzatziki you need:
- Greek Style Yoghurt
- Cucumber
- Garlic
- Dill
- Oil
- Vinegar
- Salt and Pepper

Grate and strain the cucumber and add to the yoghurt. Add all other ingredients and mix together well. Lastly add the vinegar and oil - but alternate. Serve with crackers, bread sticks or pita. Also on a meat day - you can serve this with lamb.

Try it and let me know how yours turns out. Watch this space for next Monday :)

Santa Shoebox

Kidz2Kidz’s Santa Shoebox Project is an inspiring community initiative that co-ordinates the donation, collection and distribution of personalized Christmas gifts to underprivileged children; while at the same time helping parents teach their own children about the joys of giving.

Participating is a profoundly valuable and personal experience as the donor knows the name, age and gender of the child that he/she chooses to donate to and the name of the organization that cares for the child.

Trash Island

Trash Island is a gyre of marine litter in the central North Pacific Ocean. The Patch is characterized by exceptionally high concentrations of pelagic plastics, chemical sludge, and other debris that have been trapped by the currents of the North Pacific Gyre.

There is strong scientific data concerning the origins of pelagic plastics. The figure that an estimated 80% of the garbage comes from land-based sources and 20% from ships is derived from an unsubstantiated estimate.[13] Ship-generated pollution is a source of concern, since a typical 3,000-passenger cruise ship produces over eight tons of solid waste weekly, a major amount of which ends up in the patch, as most of the waste is organic. Pollutants range in size from abandoned fishing nets to micro-pellets used in abrasive cleaners. Currents carry debris from the west coast of North America to the gyre in about six years, and debris from the east coast of Asia in a year or less. An international research project led by Dr. Hideshige Takada of Tokyo University studying plastic pellets, or nurdles, from beaches around the world may provide further clues about the origins of pelagic plastic.

Although many media and advocacy reports have suggested that the patch extends over an area larger than the continental U.S, recent research sponsored by the National Science Foundation suggests the affected area may be twice the size of Texas.

What can we do?

DO NOT LITTER. It's as simple as that. If you see something blowing around, stop and pick it up. We can help prevent it from getting worse. Also, recycle, recycle, recycle!!
